Peanut Butter Balls. That's what the kids call them, so I guess that's what they are. I got the inspiration for these little guys from a friend of ours who makes something similar. They are kind of like an energy bar rolled into a ball. A nice little "pick me up" or even dessert! They are such a big hit with our children and my husband that I thought I would share. So, without further ado...
What you need is chunky peanut butter, oats, flax seed, dark chocolate chips (much healthier and less sugar than milk or semi-sweet chocolate), and shredded coconut. Now, this is what I use because it's what I have. However, you could use creamy PB, other nuts and/or seeds, raisins, etc. The possibilities are endless!
Put your peanut butter in your mixing bowl (you do not want to hand mix these puppies). However much you want will do. Yes, it does look a little unappetizing, doesn't it. Just wait, it gets better...much better!
For that much PB I add a couple handfuls of oats, about a handful of coconut, about a tablespoon of flax seeds, and chocolate chips to your preference. ;)
Turn on your mixer and let 'er rip! You may need to add some more oats (or chocolate) to get it to the right consistency. I have found that they're ready when the mixture kind of pulls away from the bowl and holds together well. Again, it's to preference and may need some "tinkering."
Roll them into balls, whatever size you like. I make ours a little smaller to make them last longer. Also, I store them in the fridge for no other reason than if they're on the counter, they don't last a day!
Now don't write and ask about the nutritional content as I have neither the equipment or connections to find out. I do know they are good for you as oats and flax seeds keep you regular as well as providing a great source of Omega-3's (flax). Natural peanut butter is good protein and fat as well as coconut. I have given them to our children as a snack or dessert and have eaten them myself to help with the "mid-afternoon sinking" or for a little treat. Hope you like them!
